This easy-to-make blackberry coulis uses only three ingredients and freezes well, making it the perfect recipe to use up the blackberries you’ve picked during the summer months- keep a batch in the freezer and use it as a topping the next time you make pancakes or chocolate fudge cake
Caster sugar 50g
Vanilla extract 1/2 tsp
After washing the blackberries, place them in a pan with the caster sugar and bring to the boil.
Simmer until the fruit is soft, then stir in the vanilla extract.
When you’ve added the extract, let the mixture cool a little before straining it through a sieve to remove the seeds.
The coulis can be served warm or chilled, and it freezes well.
