Elderflower fritters

Make these light, golden, crunchy elderflower fritters that retain the scent of summer.

Ingredients

  • 15 Elderflower heads
  • 100g Self-raising flour
  • Oil for frying
  • 2tsp Cornflour
  • 1 Egg
  • 150ml Sparkling water
  • 2tsp Caster sugar
  • A pinch of salt
  • Icing sugar for dusting

Method

  • Step 1

    Heat oil in a saucepan until very hot.

  • Step 2

    Whisk egg, flours and sugar together then add sparkling water. This helps lighten the batter.

  • Step 3

    Dip each flowerhead into the batter and fry for 30 seconds.

  • Step 4

    Remove with a slotted spoon and dry on kitchen paper. Dust with icing sugar and eat while crunchy.
